I made a similar comment to a friend of mine who was considering buying one in the 1970s.

His answer was that they were designed to maximize functional FISHING space combined with reasonable protection from the HOT Texas Sun & bad weather, rather than beauty.

I looked at a couple of these a while ago, one was set up for camping. Looked very practical a a real goof to run around the lake with family.

I seriously considered buying one of those 19ft Larsons a couple of years ago with a DEAD 140HP Mercruiser, on a NICE trailer, for 250.oo, to STRIP & RE-MODEL into a BIG/open Gulf "dedicated fishing machine".
(120 & 140 HP Mercruiser engines are DIRT CHEAP here in south TX & very numerous, too. = GOOD ones are often 2-300.oo on craigslist.)
